Recent data from NSW Oysters and NSW Farmers shows that the NSW oyster industry produces just 0.93 kg CO₂e per kilogram of product harvested; that's less than 4 kg CO₂e per 100g of protein. For comparison, this is significantly lower than beef, lamb, or even some plant-based alternatives.

What’s more, offsetting the entire industry’s carbon footprint for a year would cost only around 1.5 cents per dozen oysters sold, making them an incredibly accessible low-emission food.

These figures come from a detailed carbon audit of 25 representative oyster farms across NSW. It’s a testament to the natural farming methods, zero feed inputs, and deep connection to tidal rhythms that define Rock Oyster cultivation.
